Pinto Beans

Ingredients

• 2-3 c Dry pinto beans
• 1 cubed onion
• 1-2 ham hocks
• 2 bay leaves

• 2 tsp garlic powder

• 2 Tbsp caldo or chicken bouillon 
• 2 pinches red pepper flakes
• 2 Tbsp  chili powder
• 2 Tbsp  cumin



Directions

Clean and rinse the beans. Put in pot of water and bring to good boil. Boil for 1-2 minutes.  Turn the stove off and let sit for 1 hour. 

Rinse beans.  Add fresh water about 3 inches above beans. Add remaining ingredients. Bring to boil. Turn heat down and simmer for about 2 hours until beans are tender. Check the beans periodically so you don't run out of water. 

**Ingredients are estimates only. Everything should be "to taste". 

For refried beans, simply drain the water and smash the beans, then "fry" in a hot skillet. No oil necessary. I prefer to not refry the beans. 

Freeze for leftovers.
