Andy's SAUSAGE AND PEPPERS

Ingredients

2 Tbsp olive oil
2 onions, sliced
5-6 green peppers, sliced
2 garlic cloves
Dash of crushed red pepper
1 large can crushed tomatoes
5 Italian sausage links

Directions
​
Preheat oven to 400 degrees Fahrenheit. Place sausage on a rimmed pan and bake for 40 minutes, turning once half way through. Remove from oven and slice sausage into half inch pieces.
Heat oil in pot. Add garlic, peppers, onion and crushed red pepper. Add S&P and sauté ingredients for about 10 minutes.
Add crushed tomatoes and cooked sausage, and simmer in covered pot in oven for one hour.
Scoop excess bread from the middle of a hoagie bun. Scoop the sausage and peppers on the bun. Sprinkle with mozzarella cheese and parmesan cheese. Place under the broiler to melt the cheese and toast the hoagie. Sprinkle with a bit of fresh basil. Serve with a light garden salad (Terri's idea).
