red chili

Ingredients

​

Knob of unsalted butter (about 4 tbsp)

Flour (enough to make a paste in the butter)

Red Chili Powder

Chicken Stock

Directions

​

Brown butter in heavy skillet.  Add flour and stir to make a pasty roux and cook flour down.  This takes a couple of minutes.  Slowly add chicken stock while stirring, about 4 cups or however much red chili sauce that you want.  Add red chili starting with a couple of tablespoons and then adjust to taste.  Add a bit of garlic powder too.  Should be the consistency of gravy.

Use over tamales, enchiladas, chilaquiles, or anywhere you like a bit of red chili.
