Sweet and Spicy Smoked Fish

Ingredients
1 1/2 cups brown sugar
1/8 cup pickling salt
1 Tbsp Cayenne Pepper
1 Tbsp Black Pepper
1 Tbsp Garlic Powder
1 Tbsp Lemon Pepper
Directions
Fillet and skin 4-6 pounds of salmon or other fish. Place in container that will fit in the refrigerator and sprinkle brine over all fish, layering as you go to cover all meat. Marinate for 24 hours, mixing often. Lay out and air dry for at least 24 hours or longer if possible. Place in smoker at 185 for 2 to 5 hours depending on thickness of fillets. Store in zip lock bags or freeze.
