Pulled Pork for Tamales

Servings: 3-4lbs shredded pork

Ingredients

The Rub

4 Tbsp chili powder

1 Tbsp kosher salt (2 tsp if using regular table salt)

1 Tbsp brown sugar

2 tsp ground cumin

1 tsp oregano

1 tsp onion powder

1 tsp garlic powder

The Meat

3 1/2 - 4 lb boneless pork shoulder roast

Chipotle chilies in Adobo Sauce

 

Directions

1. Generously rub roast with rub.

2. Cook in oven or roaster at 325 degrees Fahrenheit for several hours, until inside temperature reaches 200 degrees. A crock pot may also be used.

3. Remove meat and shred fro tamales.

4. Place sauce from one can of chipotle chilies in food processor. Blend and add to pork. Add additional sauce or blend chipotle chilies for additional heat, to taste.

5. Use in tamales, tacos, or enchiladas.
